Mediterranean Chicken Breast


  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • Fresh parsley for garnish


1. Marinate the Chicken:

  • In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and pepper to create the marinade.
  • Place the chicken breasts in a resealable plastic bag or a shallow dish and pour half of the marinade over them. Seal the bag or cover the dish, then refrigerate for at least 30 minutes, or preferably, marinate overnight for enhanced flavour.

2. Preheat the BBQ Grill:

  • Preheat your BBQ grill to medium-high heat.

  • Remove the marinated chicken breasts from the refrigerator and let them come to room temperature for about 10-15 minutes.
  • Grill the chicken breasts for approximately 6-8 minutes per side or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
  • While grilling, baste the chicken with the remaining marinade to keep it moist and flavorful.

4. Prepare Mediterranean Toppings:

  • In a bowl, mix together halved cherry tomatoes, sliced Kalamata olives, and crumbled feta cheese.

5. Serve:

  • Once the chicken is fully cooked, transfer it to a serving platter.
  • Spoon the Mediterranean toppings over the grilled chicken breasts.
  • Garnish with fresh parsley for a burst of colour and added freshness.

6. Enjoy:
